Botero

SW Steakhouse usually gets the accolades at Wynn Las Vegas, but we like the setting at Botero. Chef Mark LoRusso serves up sweet cuts of beef and chops in a modern restaurant with three of Fernando Botero’s famous paintings gracing the walls. The restaurant overlooks Encore’s pool with Botero’s Fertility Goddess sculpture watching over the scenes. Try LoRusso’s signature entree Steak Your Way, prepared in three possible styles — traditional, pepper steak and chimichurri. You can get a 12-ounce filet, 18-ounce dry-aged New York strip or a 20-ounce bone-in rib-eye. Pair it with truffle macaroni and cheese, fire and ice carrots and vanilla scented yams with marshmallows.


Jean Georges Steakhouse

Jean Georges Steakhouse is located at Aria at CityCenter, 1.877.230.2742.

Jean-Georges Vongerichten’s Prime Steak at the Bellagio generally gets the accolades, and if you’re a steak connoisseur, you know about this gem. Last December, Vongerichten opened Jean Georges Steakhouse atAria at CityCenter, this time with stylish and modern appointments. Try the filet mignon, New York strip steak, Porterhouse or rib-eye, and pair it with homemade three-pepper marmalade, soy miso butter, Bearnaise sauce or hot mustard sauce. Be sure to try the roasted porcini mushrooms and truffles. And spend a little time looking at the design of this spot. Note the details in the lounger surrounding the bar and the artwork on the walls. We won’t spoil the fun for you by giving away the joke.


Delmonico Steakhouse

Delmonico Steakhouse is located at the Venetian, 702.414.3737.

Always tops on any list of best Las Vegas steakhouses is Delmonico SteakhouseEmeril Lagasse’s stalwart at the Venetian. The restaurant takes its name from the legendary, century-old institution, Delmonico Restaurant, located in New Orleans, that Lagasse reopened in 1997. Expect Creole influences in all the food here. We suggest the bone-in rib-eye.


Tom Colicchio’s Craftsteak

Tom Colicchio’s Craftsteak is located at MGM Grand, 702.891.7318.

The artisanal ingredients used to make the dishes at Tom Colicchio’s Craftsteak at the MGM Grand are what make the food here stand out. Colicchio finds his ingredients from small family farms to give his dishes their splashes of flavor. Look for braised short ribs and grilled Kobe skirt steak on the menu. Or try one of three three-course menus specially prepared with domestic Wagyu beef. Craftsteak has a terrific seasonal menu through Dec. 30. 




StripSteak

StripSteak is located at Mandalay Bay, 702.632.7414.

Can Michael Mina do anything wrong in the kitchen? Nope. His first steakhouse, StripSteak, found a home at Mandalay Bay and easily made a name for itself. Here you’ll find his infamous butter-poached steaks, steeped in clarified butter with herbs, shallots and garlic and slow cooked. They’re finished off on a wood-burning stove. Simply luscious. Be sure to pair your steak with one of the 100-plus whiskies behind the bar.
