We like the idea of starting off this list with a little-known Mediterranean-influenced restaurant that should be on your radar. Silk Road at Vdara atCityCenter takes its name from the path Europeans took through the Middle East and Asia and the influences they had on Mediterranean dining. Executive Chef Martin Heierling uses a Moroccan tagine technique to produce tender, flavor-intense meats with some dishes, while Turkish coffee, milk and honey, nougat, ginger, pomegranate, fig and other Mediterranean and Eastern flavors create his delicate dishes.
